The notes field is for what the other fields cannot hold: a stop on the way, a child seat, a name for a meeting sign, a phone number for someone else. A note is a wish until a reply confirms it, so treat it as something to be agreed, not something already arranged.

Be specific
A note that says a stop works better when it says which stop and for how long: a pause of half an hour at a viewpoint can be agreed, while the word stop alone cannot. The same holds for a seat: write the age of the child, so the right one is ready.
A note is not a confirmation
Writing something in the notes does not make it part of the trip. The reply tells you what has been agreed. Read it for each item you wrote, and if one is missing, ask in the same conversation. What the WhatsApp request does explains where that line falls.
Write notes as short lines
Several short lines are easier to read in a reply than one long paragraph: a stop on one line, a seat on another, a name on a third. If a note is long enough to need explaining, it is probably a separate request.
